NINEB brings top of the range British charcuterie to Leicester restaurant scene

NEW INDEPENDENT NINEB BRINGS TOP OF THE RANGE BRITISH CHARCUTERIE TO LEICESTER RESTAURANT SCENE

LEICESTER’S latest independent restaurant NineB, which will open its doors on 16 January 2020 on Great Central Square, has revealed its new menu with a focus on British cuisine with an international twist. Food and beverage manager Manish Sharma will lead a team of 28 front and back of house staff members in the 120-cover restaurant. The 10-strong kitchen will be run by head chef Stewart Westwater, who has over 40 years’ experience under his belt. Following 13 years in top London restaurants, Westwater has lived in Leicester for 18 years, working at local hotels The Hilton, The Belmont and Sketchley Grange and most recently Peterborough’s Haycock Hotel. Westwater has designed the wide-ranging menu with restaurant owners Charles Street Buildings Group, creating a mix of modern dishes and traditional British classics, all made with high quality ingredients and often bringing in local suppliers.

Stewart Westwater, head chef at NineB, said: “A lot of care and attention has gone into creating NineB’s menu and we hope to entice guests from all over the country with our exciting new dishes. There is a particular focus on high quality local produce and we have sourced the very best suppliers that Leicestershire and the UK has to offer.”

NineB’s menu will feature a selection of British charcuterie from Tempus Foods, a company set up in 2014 by Masterchef winner Dhruv Baker and runner-up Tom Whitaker. Using Tempus Foods’ carefully selected meats, NineB will serve a British Charcuterie Board and Charcuterie and Cheese Board with a mature waxed Red Leicester, Keen’s Cheddar and a local blue stilton. Tempus Foods is proud of its policy to source pork from RSPCA-approved, outdoor-reared farms and uses traditional methods of spicing, curing and aging to accentuate the flavours of the meat.

Dhruv Baker, co-founder of Tempus Foods, said: “We have built our reputation over the last three years, on years of experience and excellent quality, ethically reared domestic pork. Our multi-award-winning range of British charcuterie is a firm favourite with our customers and their diners. It’s wonderful to be working with NineB, adding to their delicious and well-produced menu. We are looking forward to the reaction from their customers when the restaurant opens and we want to congratulate them on the opening, an important milestone for the city of Leicester.”

An all-day dining menu includes British charcuterie, deli sandwiches and artisan flatbreads, as well as small plates featuring spiced mahi, Brockleby’s Pies’ Melton Mowbray pork pies and gourmet sausage rolls. The restaurant menu will include a selection of starters, including pan-seared scallops with crushed pea puree and crispy pancetta, Heritage tomatoes with organic burrata and a black olive crumb, and a black pudding Scotch egg with tomato chutney. As well as fresh fish dishes of grilled seabass and roasted cod loin, there will be British classics such as an award-winning beef and ale ‘Wild Beaver pie’, made with traditionally reared beef from Leicestershire’s Vale of Belvoir and local ale from Oakham’s The Grainstore Brewery.

21-day aged British steaks, 8oz beef burgers and a falafel and spinach burger will be cooked on the grill and can be accompanied by a selection of seasonal British side dishes, including charred Hispi cabbage, English Swiss chard with pancetta and Tenderstem broccoli. A separate vegan and vegetarian menu will be available, with a selection of starters, mains and desserts.

Stewart added: “It’s incredibly important for us to cater to a variety of different tastes and dietary needs. Our vegan menu will offer something a little different, too. The vegan Cajun cauliflower dish, which is marinated for 24 hours, is something quite new and we’re excited to see what people think of it!”

The bar, which will also serve the adjoining Novotel and Adagio hotels, will stock a full selection of beer, spirits, brandies and single malts. An extensive wine list comprises European, American, South African and New Zealand wine, as well as a selection of fine champagnes and Italian sparkling wine. The restaurant will serve room service to the attached Novotel hotel and will also be open to cater for the long-stay apartments at the Adagio Leicester.

The restaurant will be open from 12pm – 10pm seven days a week.
