Fischer's on a mission to expand fine dining team - as head chef Nathan Wall's innovative touch has foodies booking months in advance

Fischer’s Baslow Hall has launched a recruitment drive for the award-winning restaurant with rooms, which offers relaxed luxury, one-of-a-kind culinary experiences, fine wine and 5-star service, in the heart of the Peak District.

A change in direction at the hands of Head Chef Nathan Wall has led to a surge in interest, from locals and visitors alike, with tables being booked up for weeks in advance. While his fresh, imaginative approach to food was starting to attract attention before the pandemic, post-lockdown it has exploded, partly driven by the striking images that Nathan and guests have been sharing on Instagram.

As a result, Nathan is looking for a Chef de Partie, Head Pastry Chef and Front of House Staff, though this wishlist is likely to grow in response to burgeoning demand.

Nathan has been carefully curating the menu since he stepped into the role in 2019, inspired by his love of foraging, along with produce sourced from the surrounding gardens, and the local area.

The food is bold but beautiful, vibrant, and inventive, but with zero interest in gimmicks and trends. The star of the show is the 8-course tasting menu, designed to transport food lovers on an unforgettable culinary journey. One dish might recall Nathan’s childhood memories of wading through Kentish rockpools with a net – while another will paint a picture of crisp autumn mornings, and leaves crunching underfoot.

“Guests are excited to be dining out again, and we’ve noticed that they’re even more adventurous now,” explains Nathan. “While there’s nothing wrong with a safe, classical menu, many people are wanting to experience dishes that they haven’t come across before. They want to be told a story. That’s what we’re striving for here at Fischer’s. We like to have fun with all the senses, from an unexpected texture to an unusual, yet delightful taste combination. All matched perfectly with a premium, hard to find wine that our expert sommelier, Matthew Davison, has recommended.”

Fischer’s, which has been family owned for more than thirty years, prides itself on creating a working atmosphere that is fun and varied, but always with the challenge to grow, both professionally and personally. Whatever level they come in at, employees are given the opportunity to progress towards their dream career. “You couldn’t choose a better time to join the team,” says Nathan. “The coming year is going to be extremely exciting, as the menu continues to evolve, and other plans start to come to fruition. We are working very closely with our head gardener, Jonathan Race, for example, to ensure we have a steady supply of interesting ingredients to incorporate into dishes – along with a beautiful environment for our guests to explore. We are also preparing to launch some incredible events and experiences, and a unique new tasting menu in 2022.”
