Three Michelin Star Dining at La Pergola, Lavish Spa Treatments Using Frankincense and More

Rome Cavalieri, A Waldorf Astoria Resort has unveiled a full schedule of festivities for the Christmas period. From gourmet feasts to restorative treatments using products from La Prairie and Aromatherapy Associates, guests will feel suitably pampered and indulged for the year ahead.

Gourmet Dining on Christmas Eve & Day

The magic of Christmas is perfectly encapsulated by Chef Heinz Beck in his exquisite eight-course Christmas Eve menu at La Pergola, the first and only three Michelin starred restaurant in Rome. Guests can enjoy Chef Heinz Beck’s delectable creations including Scallop carpaccio with cauliflower puff and caviar, and Belgian endive with orange, mulled wine ice cream and Christmas scents. The delicious pre-Christmas feast is accompanied with matching fine wines from La Pergola’s wine cellar, housing over 70,000 world-class bottles (€490/£433 per person).

For the main event, Chef Heinz Beck will serve an equally impressive eight-course dinner banquet at La Pergola on Christmas Day, accompanied with live piano music and unparalleled views across the Eternal City. Guests will enjoy a range of sumptuous flavours including Duck foie gras with pear and ginger, and Capon tortellini with carrot purée, Grana Padano sauce and white truffle. The menu is completed with a Christmas dessert and a fine selection of prestigious labels from La Pergola’s renowned cellar (€490/£433 per person).

Alternatively, Executive Chef Fabio Boschero and his team will be heading up a seafood delight for Uliveto’s Christmas Eve menu including Seared scallops and stewed shallots on cannellini mousse with truffle, Monkfish medallions in a cockles guazzetto sauce, and a Christmas harmony gingerbread for dessert by Pastry Chef Dario Nuti (€98/£87 per person).

On Christmas Day, Uliveto restaurant will be hosting an Italian Christmas Brunch with live music, celebrating authentic local flavours from recipes that have been handed down from generation to generation (€175/£152 per person).

For a truly unforgettable Christmas, Father Christmas will arrive on his sleigh with gifts for all the younger guests, whilst adults can enjoy an after-dinner toast with desserts created by Pastry Chef Dario Nuti and spirits tasting at Tiepolo Lounge & Terrace (€40/£35 per person).

New Year’s Eve and Day

Guests can see out 2019 with Chef Heinz Beck’s heavenly New Year’s Eve menu at La Pergola, comprised of one-of-a-kind dishes including Rabbit tortellini with carrot and chamomile, and Lobster in ‘nduja crust on almond cream with cherries marinated in vervain and Turkish rose. The feast will be accompanied with wine, music and a spectacular fireworks display (€1,300/£1,148 per person).

Alternatively, a delectable meal signed by Chef Boschero and his team will be served in Le Belle Arti Banquet Room overlooking the hotel’s beautiful grounds, accompanied with wine and champagne to toast to the New Year (€390/£345 per person). Guests can continue the celebrations on New Year’s Day with a special brunch created by Chef Boschero, along with live music held in the Garden Lobby (€155/£137 per person).

Guests can see in the New Year with a lounge party held at Tiepolo Lounge & Terrace, with Veuve Clicquot and salted delicacies (€220/£186 per person). The Terrazza degli Aranci will also hold a New Years’ Eve party boasting breathtaking views of Rome with the Dome of St Peter's as a focal point of the skyline, with music, Moët & Chandon Champagne, desserts and a spectacular firework display (€190/£168). Children can enjoy games, entertainment and music in Sala Ellisse (€90/£80 per child).

Festive Pampering at the Cavalieri Grand Spa Club

The Cavalieri Grand Spa Club will offer a range of treatments available to book throughout the festive period. In the true spirit of Christmas, the Cavalieri Grand Spa is offering a 50-minute Rose Hydrator treatment that includes an Ayurvedic scalp massage using frankincense (€200/£177 per treatment).

Guests can also experience The Forest Therapy Treatment, using a unique essential oil blend from Aromatherapy Associates combined with a deep scalp massage to leave one feeling tranquil and refreshed. The treatment includes a Christmas gift from Aromatherapy Associates to continue the pampering at home (80 minutes, €190/£168 per treatment).

Meanwhile the Ultimate Indulgence Body Treatment with La Prairie includes a body treatment, wrap and relaxing caviar massage, complete with a luxurious La Prairie gift to take home (110 minutes, €305/£270 per treatment).
