New restaurant to open at Coworth Park this September


Dorchester Collection’s luxury country house hotel and spa, Coworth Park announces the opening of new restaurant: Woven by Adam Smith.

Due to be unveiled on September 8th, 2022, the new restaurant will offer diners an unforgettable culinary experience, in a stunning new space created by Martin Hulbert Design, set amongst 240 acres of picturesque parkland. AtWoven by Adam Smith, the stunning setting and interior design, exquisite food, warm service and stories that the restaurant tells, will all come together to create an extraordinary dining experience. The restaurant concept and design of the space have deep roots to the idyllic Berkshire countryside that surrounds the hotel, just 45 minutes from London.

Chef Adam Smith will create dishes inspired by classic flavours and techniques, presented in fresh, creative, and contemporary ways. The finest produce will be showcased throughout the restaurant, with fresh seafood, outstanding butchery, foraged mushrooms, hand-picked herbs and native flowers from Britain’s famed larder, acting as inspiration for the seasonally changing menus.

The hotel’s stunning surroundings and Adam’s innovative new menus will inform the drinks programme at Woven by Adam Smith, featuring seasonal cocktails and many English wines alongside leading international producers.

The interiors for Woven by Adam Smith are led by Martin Hulbert, the designer of Coworth Park when the hotel first opened in September 2010. The main dining room seats 44 guests, with the adjoining conservatory, seating 14, having sweeping views over Coworth Park’s grounds. Every detail of the design has been inspired by the natural world, with the fabrics, lighting, artworks, natural materials, and striking colours and textures all coming together to create a lively, luxurious, and infinitely interesting space. The design will be theatrical and contemporary yet woven seamlessly into the fabric of its Georgian manor house setting and the surrounding Berkshire countryside.

Speaking on the restaurant launch, Adam Smith comments: “A memorable dining experience is created by so much more than the dishes that we eat. With Woven, we will be pushing the boundaries of creativity and excellence in food, but also in drinks, service and design to create a restaurant that delights both destination diners and hotel guests alike. Stories and knowledge from my entire career, alongside inspiration from the idyllic landscape, will be woven into the menus, and the dishes, whilst refined, will be presented in playful and contemporary ways. Woven has been many years in the making, and we cannot wait to welcome our first guests.”
